That was the other night. Kind of wanting to use up a ton of veggies in the fridge. Kind of not wanting to have another stir fry.
Don't get me wrong. I love a good stir fry. I really do. It is probably one of my favourite meals. And has been even when I was a child. Mainly because of the broccoli and carrots (fave veggies) and the rice. I could eat rice every day. In fact, I did, in university. But that's besides the fact that the reason I didn't want stir fry was not because I didn't want stir fry. It was because stir fry without soy sauce has it's limitations. There are tons of ways around it. Making more vinaigrette-style sauces. Using nut butters to thicken them and add flavour. Using coconut amino in it's place... I think I have tried them all. And they all taste great. Really! It's just, well, after a while, you miss soy sauce. :(
Until you've realized you have all the ingredients to make this delicious sauce, adapted from the awesome bloggers at Minimalist Baker. I use their site a lot!
Sweet, creamy, spicy. Overtop stir fried veggies and rice. Yum.
Yup, I'll add this to the repertoire. A great sauce for stir fries!

Total Time: 25 minutes
Coconut oil for cooking, about a tbsp
1 small onion, diced
4 cloves garlic, minced
1 tsp ground ginger
Veggies of choice, such as broccoli, carrots, peppers, snow peas, asparagus, beans. etc. We also used fiddleheads! As much as you want
1 Tbsp curry powder
1 can coconut milk
1-2 cups veggie stock
Sea salt and black pepper
What to do:
1) Heat coconut oil in a large pan on medium heat. Add the onion, garlic, ginger, veggies, salt and pepper. Cook, stirring frequently, until softened – about 5 minutes.
2) Add curry powder, cayenne, veggie stock, coconut milk, another healthy pinch of salt and stir. Bring to a simmer then reduce heat slightly and continue cooking for 10-15 minutes. Stir!
3) Taste and adjust seasonings as needed. Serve over rice or quinoa, or noodles! Enjoy!
We really cooked these things. From scratch. On weeknights. And we even had time to do the dishes.
They have real, simple ingredients that you'll find in your cupboards. They're healthy and delicious. No lies.
