Chocolate Date Rolls

Vegan-Friendly.  Dairy-Free. Gluten-Free. Sugar-Free. Egg-Free. Soy-Free.  Could even be nut-free.  Takes 5 minutes to make.  Only a few ingredients and you don't even have to measure. Stores easily in refrigerator or freezer.  Budget-friendly.  And they taste delicious!!  Sweet, choclately, crunchy, chewy. Did I sell you on them yet?   

I can't believe it has taken me this long to get on the 'date' craze.  Dates are such a delicious natural sweetener and for some reason, I've been nervous to use them.  Why?  It was so easy!  

I didn't measure this recipe.  Actually, I'm not even sure if you can call this a recipe.  It is so versatile to fit your preferences.  Unless you don't like dates.  Then this might not be for you.  But even still, you should try it just in case you might still like them.  We are loving having a container of these in the fridge!  They are a tasty treat that pack a lot of nutrients and energy! Perfect for a little pick me up when baby took forever to fall asleep for her nap or she only is content in your arms. :)

Here's what I did for this batch. Totally versatile though.  I'll probably change them every time I make them.

Total Time: 5-10 minutes

Ingredients:
Pitted Dates - I found a great pack at Costco for a great price.  I only used maybe 15 dates?  Not sure, I just put enough in to fill the bottom of the food processor. 
Cocoa Powder - about 1 tbsp. ?  Again, estimating here. 
Unsweetened shredded coconut - maybe about 3/4 cup or so, not sure.  Just dumped. Also, have a little bit in a dish to use for rolling later on.
Seeds & nute:  Whatever you have!  I had probably about 1/4 cup of pecans, 1/2 cup walnuts, 1/2 cup sunflower seeds.  I just went for it. 
Warm water - a couple teaspoons as needed

What to do:

1) Blend dates in food processor until sticky and malleable. Add warm water if needed to loosen up.  Use a spoon to spread out every so often between blending as it tends to become one giant clump. 

2) Add other ingredients and blend!  Add more or less, depending on your preferences.  Leave a bit of coconut for rolling, if you'd like.

3) Roll into small balls, dip in coconut if you wish, store in a sealed container in refrigerator or freezer.  They are tasty both ways!
