No planning ahead tonight... what will we make for dinner? Chicken and potatoes - roasted! This meal is our go-to easy meal. It tastes delicious and is extremely versatile. Use whatever meat and veggies you have on hand! Switch it up with a roasted pork chop, roasted veggies, and a side of unsweetened apple sauce - yum! I seriously could eat roasted veggies every day, perfectly tender with edges of crispiness! Especially sweet potato - mmmm amazing! I just ate this, but I could go back and make more it is so good! Tonight, we paired them with simple seared chicken breasts with tarragon and lemon zest. This is a delicious weeknight meal that tastes like a homemade Sunday night family dinner!
Total time needed from start to finish: 40 minutes
Preheat oven to 400 degrees Fahrenheit
Food you'll need:
2 Chicken Breasts, thawed
A couple drizzles of Extra Virgin Olive Oil
Spices we used tonight: Sea Salt/Pepper, Tarragon for meat, Paprika for veggies
Zest and juice of a quarter lemon for both
Veggies to roast (sweet potatoes, carrots, squash, parsnips, or others of preference)
What to do:
First, season the chicken with S/P, lemon, and tarragon. Heat oil in a skillet and sear chicken on both sides, about 3 minutes on each side. Transfer to a oven-safe pan and bake in oven for a total of 30-35 minutes, or until chicken is not longer pink on the inside. (Hint: add a splash of water to the hot pan used to sear the meat - this will give you a tasty glaze to add to your chicken when it is done, if you wish!)
While the chicken is in the oven, chop all of the veggies into inch thick pieces. Place on a cookie baking sheet, drizzle with oil, S/P, and paprika. Stir to evenly coat all of the veggies. Bake in over for a toal of 20-25 minutes, or until veggies are done to your liking.
When all is done, I like to drizzle my veggies with a little bit of lemon juice as well. Adds an extra kick. Enjoy!

We really cooked these things. From scratch. On weeknights. And we even had time to do the dishes.
