It's been a while since I've posted a recipe! Reason being - we had a baby! Yes, Miss Hannah joined our world June 19th, 2014, with a bit of a surprise and scrambling, but we were so happy to have a healthy baby of our own. During the pregnancy and first month of her existence, it has been crazy busy for us - all self-inflicted of course. Taking on 3 renovations - a new kitchen, a baby room, and an addition onto the house for a side mudroom - has definitely kept things crazy busy and overwhelming, of course. We are still in the midst of the mudroom renovation, so we are definitely looking forward to when it is all over and we can calmly enjoy our little bundle of joy :)
In the meantime, I have been wanting to get back into my food blog. So, here's my first recipe post-baby birth: a fresh, healthy, and straight from the garden salad. It makes great use of the in-season veggies, while also providing enough carby-stuff to be a yummy, filling meal. It was our supper tonight!
Total time: 15 minutes
Garden fresh veggies of choice. We used: tomatoes, cucumber, green onion, garlic scales, snap peas, romaine lettuce, red and yellow pepper
Pasta of choice
1/4 cup Extra Virgin Olive Oil
1/4 cup White Vinegar
1/8-ish cup honey
Juice of 1/2
Sprinkle of sea salt, pepper, basil, oregano, tarragon
What to do:
1) Cook pasta according to package. Drain and cool.
2) Chop vegetables.
3) Shake dressing ingredients together.
4) Combine and serve!
We really cooked these things. From scratch. On weeknights. And we even had time to do the dishes.
They have real, simple ingredients that you'll find in your cupboards. They're healthy and delicious. No lies.
